Khmer Maine is seeking Seasonal Seafood Processors to join our Salted Green Crab program — an innovative project that transforms invasive green crabs from Maine's coastal waters into a traditional Cambodian salted seafood product. In this role, you'll help process and package our product while supporting a mission that combines environmental stewardship, economic opportunity, and cultural food traditions.
Processors work under the supervision of the Food & Farm Program Manager and Program Assistant. Full training is provided, and processors will also have the opportunity to contribute ideas for improving our production process.
Responsibilities
Receive and inspect green crabs and ingredients to ensure they meet food safety and quality standards
Sort and wash green crabs, and prepare ingredients for production
Prepare and package product according to Khmer Maine's recipe and procedures, including marinating and freezing
Conduct regular quality checks throughout production to ensure compliance with food safety and quality standards
Maintain accurate production and food safety logs
Collaborate with team members to keep supplies and ingredients stocked and the workspace clean and organized
Follow standard operating procedures and recipes consistently
Complete food safety training as required (e.g., ServSafe or equivalent, provided by Khmer Maine)
Qualifications & Skills
Experience with, and enthusiasm for, food processing, cooking, or cultural foodways
Good hand-eye coordination and manual dexterity
Ability to work collaboratively, follow directions, and manage multiple tasks
Strong attention to detail and organizational skills
Understanding of, and commitment to, cleanliness and food safety/sanitation best practices
Comfort working in a fast-paced, hands-on production environment
Availability to work some evenings and weekends
Preferred:
Bilingual or multilingual, especially in Southeast Asian languages (Khmer, Vietnamese, Lao, etc.)
Familiarity with Southeast Asian culture and community values
Working Conditions
Prolonged standing and repetitive hand motion
Ability to lift 10–20 lbs
Work in a shared commercial kitchen environment
Exposure to varying temperature conditions (coolers, freezers)
Regular use of scales, measuring tools, and food processing equipment
Occasional evening and weekend hours
Occasional travel to outreach or program events may be required
Employment contingent upon successful completion of a background check
